In that regard I have no idea. I know I can't eat fresh garlic because it's the oil I'm allergic to (and fresh includes the moist forms you can buy in jars in the produce areas) but I have no trouble at all with deydrated garlic. However, I don't know what it is that they do to powedered garlic as they take out the moisture that makes it okay for me to eat. Or how it would relate to how fruit and fruit peels are dehydrated.
